Raw Vegan Cinnamon Rolls

Ingredients – Dough:

  • ½ C almond flour
  • 1 C flax meal
  • 1 tsp vanilla extract
  • 3 drops Stevia clear
  • coconut meat from 1 young coconut
  • water from young coconut (just enough to enable blending)

Ingredients – Filling:

  • 1 C walnuts or pecans, soaked and dehydrated
  • coconut meat from 1 young coconut
  • 1 tsp nutmeg
  • 1 TBS cinnamon or 1 drop doTerra cinnamon oil
  • 13 drops Stevia clear

Ingredients – Frosting:

  • ½ C cashews
  • 1/4 C water
  • 8 drops Stevia clear
  • 1 TBS lemon juice

Instructions – Dough:

  1. Blend ingredients in food processor adding just enough coconut water to achieve consistency of dough. Sprinkle an additional ½ cup powdered flax seeds on a cutting board.
  2. Press dough out by hand into a square.

Instructions – Filling:

  1. Blend ingredients in food processor or for extra creaminess blend in a high-power blender.
  2. Spread filling completely over dough.
  3. Roll dough and cut into 1 inch pieces.
  4. Dehydrate at 125° for 4 hours.

Instructions – Frosting:

  1. Blend until smooth.
  2. Put in dehydrator for a little more time to warm after frosting.
