water from young coconut (just enough to enable blending)
Ingredients – Filling:
1 C walnuts or pecans, soaked and dehydrated
coconut meat from 1 young coconut
1 tsp nutmeg
1 TBS cinnamon or 1 drop doTerra cinnamon oil
13 drops Stevia clear
Ingredients – Frosting:
½ C cashews
1/4 C water
8 drops Stevia clear
1 TBS lemon juice
Instructions – Dough:
Blend ingredients in food processor adding just enough coconut water to achieve consistency of dough. Sprinkle an additional ½ cup powdered flax seeds on a cutting board.
Press dough out by hand into a square.
Instructions – Filling:
Blend ingredients in food processor or for extra creaminess blend in a high-power blender.
Spread filling completely over dough.
Roll dough and cut into 1 inch pieces.
Dehydrate at 125° for 4 hours.
Instructions – Frosting:
Blend until smooth.
Put in dehydrator for a little more time to warm after frosting.
